01 -  Combine ground turkey, grated apple, maple syrup, dried sage, dried thyme, onion powder, salt, black pepper, and red pepper flakes in a large bowl. Mix thoroughly until evenly incorporated. 
 02 -  Divide the mixture into 8 equal portions and shape each into a patty about 1/2 inch thick. 
 03 -  Heat olive oil in a large skillet over medium heat. Place patties in the skillet and cook for 4-5 minutes per side until golden brown and internal temperature reaches 165°F. 
 04 -  Rinse rice under cold water until the water runs clear. In a saucepan, combine rice, water, and salt. Bring to a boil over medium-high heat, reduce to low, cover, and simmer for 15 minutes. 
 05 -  Remove the saucepan from heat and let sit, covered, for 5 minutes. Fluff rice with a fork and stir in butter, parsley, and chives until well blended. 
 06 -  Arrange turkey sausage patties on a platter. Serve alongside herbed rice.
