# What You Need:
→ Pastry
01 - 2 sheets (about 17.6 oz) ready-made puff pastry, thawed if frozen
02 - 1 egg, beaten (for egg wash)
→ Apple Filling
03 - 2 medium apples, peeled, cored, and diced
04 - 2 tablespoons granulated sugar
05 - 1 tablespoon brown sugar
06 - 1/2 teaspoon ground cinnamon
07 - 1/4 teaspoon ground nutmeg
08 - 1 teaspoon lemon juice
09 - 1 teaspoon cornstarch
→ Decoration (Optional)
10 - Pearl sugar or coarse sanding sugar
11 - Icing (powdered sugar mixed with a little milk)
# Directions:
01 - Preheat oven to 400°F. Line a baking sheet with parchment paper.
02 - Combine diced apples with granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch in a bowl. Set aside.
03 - Roll out puff pastry sheets on a lightly floured surface. Using a mitten-shaped cookie cutter or template with a sharp knife, cut out 16 mitten shapes.
04 - Place 8 pastry mittens on prepared baking sheet. Spoon a heaping tablespoon of apple filling onto center of each, leaving a border around edges.
05 - Brush edges of each pastry with beaten egg. Top with second mitten cutout and gently press edges with a fork to seal.
06 - Brush tops with egg wash. If desired, sprinkle with pearl or sanding sugar for added texture.
07 - Cut a small vent into the top of each pie to allow steam to escape during baking.
08 - Bake for 20 to 22 minutes until golden and puffed.
09 - Allow pies to cool slightly. Optionally, drizzle with icing for decoration.
