# Directions:
- Combine cottage cheese, chopped hard-boiled eggs, lemon juice, black pepper, and chopped dill in a bowl; mix thoroughly.
- Place one nori sheet shiny side down on a bamboo sushi mat or a clean kitchen towel.
- Lightly spread a thin layer of cream cheese over the nori, leaving about 3/4 inch border at the top edge.
- Evenly spread one quarter of the cottage cheese filling across the bottom third of the nori sheet.
- Top the filling with smoked salmon slices, followed by julienned cucumber, carrot, sliced avocado, and finely sliced spring onions.
- Using the mat, roll the nori tightly from the bottom edge, keeping filling compact; moisten the top edge with water to seal the roll.
- Repeat the rolling process with remaining nori sheets and fillings.
- With a sharp, dampened knife, cut each roll into 6 to 8 pieces.
- Arrange rolls on a platter, garnish with extra dill, and serve with soy sauce or tamari, wasabi, and pickled ginger as desired.
