# Expert Advice:

01 -
  • It tastes like summer on a plate—sweet, savory, and completely elegant without fussing over it.
  • Takes less time to make than to set the table, which means you can pull it together for last-minute dinners.
  • The combination of textures and temperatures keeps every bite interesting, from soft cheese to crisp arugula.
02 -
  • Don't oil the peaches too heavily or they'll slip around on the grill—a light brush is all you need.
  • The timing matters: warm peaches on cool greens with cold creamy cheese is what makes this work, so assemble right before eating.
03 -
  • Make sure your grill is properly preheated; a cool grill will steam the peaches rather than caramelize them.
  • If you're nervous about grilling, a cast-iron skillet works almost as well—get it smoking hot and don't move the peaches around.
