# Directions:
01 - In a large skillet over medium-high heat, cook the ground beef until browned, breaking it apart during cooking, approximately 4 to 5 minutes. Drain excess fat as needed.
02 - Add diced onion and minced garlic to the skillet and sauté for 2 to 3 minutes until softened and fragrant.
03 - Mix in taco seasoning, salt, and black pepper thoroughly to coat the meat evenly.
04 - Add uncooked pasta, undrained diced tomatoes with green chilies, broth, and tomato sauce to the skillet. Stir to combine all ingredients.
05 - Bring the mixture to a boil, reduce heat to a simmer, cover, and cook for 12 to 14 minutes, stirring occasionally, until pasta is tender and most liquid has been absorbed.
06 - Remove skillet from heat and stir in shredded cheddar cheese until melted and creamy.
07 - Fold in the sour cream until fully combined and the mixture is smooth.
08 - Serve immediately, garnished with cilantro, green onions, or diced tomatoes as desired.
