# Directions:

01 - Set the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
02 - In a sizeable bowl, whisk together oats, flour, brown sugar, baking powder, baking soda, cinnamon, and salt until uniform.
03 - In a separate bowl, beat the eggs lightly, then add applesauce, vegetable oil, and vanilla extract. Mix until smooth.
04 - Pour the wet mixture into the dry ingredients and stir using a spatula just until no pockets of flour remain; do not overmix.
05 - Fold diced apple and caramel chips gently into the batter to distribute evenly.
06 - Spoon batter into the prepared muffin cups, filling each approximately three-quarters full.
07 - Place the muffin tin in the oven and bake for 18 to 22 minutes, until golden brown and a toothpick inserted in the center comes out clean.
