# Expert Advice:

01 -
  • It's ready in under 15 minutes, which means you can actually eat something nourishing on a weekday morning without sacrificing sleep.
  • The creamy avocado and protein-rich eggs keep you satisfied for hours, no crash at 11 a.m.
  • The lemon juice and fresh herbs lift everything so it never tastes heavy or one-note, even though there are only a handful of ingredients.
02 -
  • If your avocado is slightly underripe, don't force it—the egg mixture will still be delicious, but the texture won't have that signature creaminess you're after; it's better to wait another day.
  • Lemon juice is the secret ingredient that keeps the avocado from browning too quickly and keeps the whole thing from tasting flat; even if you're not a lemon person, trust it here.
03 -
  • Buy your eggs from a farmer's market or place that turns over stock quickly—older eggs are harder to peel, and the yolks won't be as vivid.
  • Taste the avocado-egg mixture before you plate it; if it needs salt, add a tiny pinch, because you can always add more but you can't take it back.
